Why karaoke works on a stag do

Karaoke suits a stag do because everyone has to get up and perform while the group watches. Personalities come out fast, and the shared glory and humiliation bond the lads, mostly by embarrassing each other.

In a private room, nobody's singing to a bar full of strangers, which takes the fear out of it. It's just your mates, backing each other through some very dodgy song picks and brave vocal efforts.
